A quick easy way to make spaghetti and meatballs is to buy the Swedish pre-cooked meatballs.

They taste great and stay solid during cooking so make your pasta sauce and throw them in it for 10 minutes.

Voila, quick, tasty and consistent!

The REAL Frankie

As this is a fictionous diner…it does have some factual roots.  It’s named after my friend Frankie, who I don’t see anymore.

Frankie is in fact just a bit of a stoner.  Chills way too much until the smoke runs out.  But he’s a mellow guy generally.

It’s a shame Frankie didn’t do anything with his life, but he didn’t want to except feel cossetted in a warm marjuana feeling (who doesn’t).  But he took it too far and is now almost and ornament in life.

Anyway Frankie, this blog is inspired by you dude.

Jock the rigger…

Today Jock the rigger came in.  He hadn’t been in town for a while and was in fact, drunk.

Meanwhile he was trying to chat up the female staff and acted like ‘don’t you remember me, Jock?’

Eh, no jock I don’t and don’t want to.

1 fried eggs and bacon later, he left.

Drunks…I opened a diner so I wouldn’t have this problem….hmmmm…

New dish for the menu

Mushroom risotto.  I’ve got it perfected.

Fry the mushrooms in extra virgin olive oil

Add garlic at the end and fry for a few minutes

Add lemon + coriander, set aside.

Lots of butter, fry the red onion

Add the rice after 20 mins and coat in butter.

Add chicken stock and keep stirring occasionaly/simmering for 30 minutes.

Once the rice is soft, add mushrooms, chopped coriander, salt and more butter and parmesan.

Serve not hot, but at room temp.

Chorizo sausage scrambled egg with parmesan cheese, garlic and coriander

Set on top of toasted panni bread drizzled in olive oil

Washed down with fresh squeezed pomegranate juice.

Yup, that’s todays special….yummy!
